So I believe that this recipe was also in one of my Friday Favorites post and I finally made it. It was really good. My boyfriend was also a big fan. He enjoyed it so much that he got a second helping and overstuffed himself. I followed the recipe almost exactly except that I used cheddar and mozzarella cheese rather than pepperjack because I figured the Rotel would add enough of a kick to the dish. I was just going to use cheddar cheese but since I did not have enough I used the rest of it and then mozzarella. We both agreed that it was fine without the pepperjack because the Rotel did give it enough of a kick. However, if you want more you could add it or I’m sure any cheese would be delicious in it. Also, the recipe calls for corn and I left that out only because I’m not a big fan of corn in things. I like corn by itself but I prefer it to be left out of things otherwise.
My boyfriend took some of the leftovers for lunch today and when he called me on his lunch break he suggested that next time maybe we use all mozzarella cheese and add bacon to it. Also instead of using the regular Nacho cheese Doritos we should try Cool Ranch Doritos. I am all in for this idea. As with each new recipe I am going to make I like to make it the original way or as close to the original way first just to try it and then go from there deciding if I should make any changes. It was really good the way it was but I think bacon makes anything better and mixing it up with the Cool Ranch sounds really good.
This also seems like a good dish that could be served to a decent sized crowd if you just adjusted the recipe and used a bigger dish. I hope you give it a try and like it like we did. If you do and if you make any changes feel free to comment and tell me what you thought.
